Jeremiah Bullied, Hotel Belmar’s new chef from Montreal, Canada, has been specializing in farm to table cuisine for over a decade. He brings to Monteverde his experience with casual fine dining, alternative agriculture, and permaculture design. “A dish is only as good as the ingredients available to the chef,” says Jeremiah, “and when you have the abundance of fresh, organic food that you have here in Costa Rica, you can’t help but be inspired.”
It maybe winter in Canada, but summer is here in the cloud forest of Monteverde. Jeremiah says he was enticed to leave a snowy winter at home not only for a change of scenery and climate, but also to take on the challenge of the farm to fork concept in place with different local ingredients that are very exotic for him and the North. “I was lucky to find a home at the Hotel Belmar, we have a very similar vision of where food should be coming from. I really value cooking in a restaurant where we have our own organic garden, coffee farm, ranch, as well as a carefully curated staple of local producers providing us with the very best for our menus.” Jeremiah explains.
