Arturo –head chef of Restaurante Celajes- creates eclectic combinations of food that honor Costa Rican cuisine but also add strong international influences, especially French. He loves working with the farm-to-table experience because he believes that guaranteeing the freshness of every ingredient contributes enormously to the restaurant’s success. We recently interviewed him on the vision of Restaurante Celajes and why he feels excited about working at Hotel Belmar.

Q: What is your name?
A: Arturo Mora Campos.

Q: What is your role here at the Hotel Belmar?
A: I am the Executive Chef of the Hotel Belmar and Restaurante Celajes.

Q: When did you start here?
A: I started last year, specifically on December 2.

Q: Where are you originally from?
A: I’m from Cartago, specifically Turrialba.

Q: Do you have brothers or sisters?
A: Yes. We are five siblings in total – one sister and four brothers.

Q: Are you the only chef in the family?
A: Yes, I’m the only one who does it professionally, but everyone enjoys cooking.

Q: Does that enjoyment come mostly from your mother or your father?

A: Both – because of my dad’s work, he always cooked. Meanwhile my mother always took the time to teach us how to cook, since we were children.

Q: Where did you study?
A: I studied culinary arts at the Universidad Latina.

Q: Why did you want to come to work with Hotel Belmar?
A: It’s a very interesting hotel that matches my high expectations. I was particularly drawn to the hotel’s commitment to farm-to-table dining. Plus, being here in Monteverde is a great life experience, both professionally and socially.

Q: Why do you enjoy working in Monteverde?
A: I love the people and nature you can find in this place, its like cooking in heaven.

Q: What is your favorite food?
A: All of it! I like everything. But if I had to pick one, it would be Italian food. Any pasta is delicious, especially if it has cheese – carbonara, or anything with a fresh tomato sauce.

Q: What is your favorite meal to prepare?
A: Anything with the leading ingredients of our own country. And now that I’m in Monteverde, I like to find autochthonous local produce specific to this area. I like to experiment with new products, combinations, and mixes to achieve a new creation. Also in the kitchen I love to work in the area of ​​confectionery and pastries. In that realm I have the greatest connectivity and feel the most comfortable.

Q: And when you’re not cooking, what you do in your free time?
A: I like to read, exercise, jog, or go to the gym. I’m actually a personal trainer and feel quite passionate about fitness and health.

Q: What do you want to bring to Hotel Belmar?
A: I want to take the nature that I see all around me in Monteverde and transform it into dishes for Restaurante Celajes, creating a harmony between the ingredients, textures and colors to please our guests. My goal is to create dishes where guests can taste and see Monteverde in the plate, because being here is wonderful. I regularly walk around the organic garden of the hotel to find fresh ingredients and gather inspiration.

The hotel's organic garden boasts a wide variety of vegetables, including bok choy, kale, swiss chard, eggplant, lettuce, green beans, basil, edible flowers, tomatoes, onion, garlic, a wide selection of herbs and unusual native plants such as jaiva and amaretto.

Q: What would you consider “success” regarding your work here at Hotel Belmar?
A: Success for me would be expressed in each customer and their satisfaction with their meal. I want each guest to have a smile on their face. Truly my greatest satisfaction and pride is pleasing each and every one of our clients.

Q: What are your plans for the future of Restaurante Celajes?
A: To make the best food offered in Monteverde and to be one of the best in all of Costa Rica, all while transforming local ingredients and offering them as gourmet dishes.

We are starting to grow more and more products in our gardens, as well as identifying the best local suppliers, in order to further develop our farm to table experience. As we start identifying new ingredients we will start integrating new dishes in the menu.

Q: Which of the new dishes is an example of that vision?
A: Creating and selecting the new menu was a lot of hard work, which I am now very proud of. One of the new dishes is the plantain gnocchi, made with plantains from our farm, pomodoro sauce with heirloom varieties of tomatoes from our garden, garlic, and Costa Rican blue cheese. Our caretaker, Gato brings produce from the garden every day, so that we can achieve the highest level of freshness possible. Another one of my favorites is the roasted squash soup which was created using ingredients from our country but with a more gourmet approach. This dish has a fusion of flavors and aromas. Guest’s should know that once the first spoonful hits their mouth, a big surprise awaits them.

Q: How do you create these new recipes?
A: The creation of our dishes is a mixture of all the important elements and experiences of my life – God, my family, people who inspire me every day, the places I’ve been, the place where I reside, inspiration from our customers, and also from other chefs worldwide who have served as my motivation and an example to work towards.

Q: Would you like to add anything else?
A: All of the new menu dishes could not have been completed without the hard work of my team in the kitchen. Day in and day out we strive to work together and offer the highest quality food possible. As a team we carefully choose all of the ingredients. We include additional time to perfect the preparation process of the foods and textures we use and create a visual and gustatory harmony on the palates of each client. We hope to meet the highest expectations of those coming to visit Restaurante Celajes. We don’t want guests to just come and eat; we want them to share a truly unique and genuine experience with us.

Lo que mas le ha gustado de trabajar en el Hotel es la experiencia “huerta a la mesa”, pues considera que la frescura de cada ingrediente contribuye enormemente al éxito de nuestros platillos.

Q: Cuándo empezó a trabajar aquí?
A: Empecé el año anterior, específicamente el dos de diciembre del 2013.

Q: De dónde es usted?
A: Soy de Cartago específicamente de Turrialba.

Q: Tiene hermanos o hermanas?
A: Si. Somos cinco hermanos en total. Una mujer y cuatro hombres

Q: Es usted el único chef de la familia?
A: Profesionalmente sí, pero a todos nos gusta cocinar.

Q: Y eso viene mas de su madre o de su padre?
A: De los dos, porque debido al trabajo de mi papá, él siempre cocinó. Por el lado de mi madre, ella siempre nos enseñó a cocinar desde pequeños.

Q: Dónde estudió?
A: Estudié artes culinarias en la Universidad Latina.

Q: Por qué quería trabajar con el Hotel Belmar?
A: Porqué considero que es un hotel muy interesante y además tengo expectativas muy altas que comparto con el hotel. Particularmente me atrajo el compromiso que tiene el hotel con la experiencia de granja a la mesa. Además, el estar aquí en Monteverde es una gran experiencia para mi vida, tanto profesionalmente como socialmente.

Q: Por qué le gusta trabajar en Monteverde?
A: Me encantan las personas y la naturaleza que se encuentran en este lugar, es como cocinar en el cielo.

Q: Cual es su comida favorita?
A: Todas! Me gusta todo, pero si tengo que escoger algo, prefiero la comida italiana. Cualquier pasta, especialmente Carbonara o alguna con tomate fresco.

Q: Cuál es su comida favorita para preparar?
A: La que lleve ingredientes propios de nuestro país. Y ahora que estoy en Monteverde, me interesa rescatar productos autóctonos de la zona. Me gusta también experimentar con nuevos productos, fusiones, mezclas y lograr una nueva creación. También en la cocina

me encanta lo que es el área de pastelería y repostería. Es con la que más me siento a gusto y tengo mayor conectividad.

Q: Y cuando no está cocinando, qué hace en su tiempo libre?
A: Leer y hacer ejercicio como salir a correr o ir al gimnasio. Soy entrenador personal, y me gusta mucho la salud y el ejercicio.

Q: Que quisiera aportar al Hotel Belmar?
A: Quiero traer la naturaleza que yo puedo ver en Monteverde y transformarla en los platillos del restaurante; armonizando una fusión de los ingredientes, texturas y colores, para lograr complacer de la mejor forma a nuestros comensales, tanto por el sabor, como por la visión. La idea es hacer un plato armonioso con este lugar porqué, el estar aquí es algo maravilloso. Habitualmente camino por las huertas del hotel para buscar los ingredientes mas frescos y encontrar inspiración.

Q: Que significa para usted tener éxito en su trabajo?
A: Éxito para mi es poder observar a cada cliente satisfecho con su comida. Una sonrisa en un rostro por la satisfacción de haber comido aquí y haber pasado un momento completamente agradable. Esa es mi mayor satisfacción y mayor orgullo. El complacer el gusto de cada cliente del Hotel.

Q: Que planes tiene para la comida futura de Restaurante Celajes en el Hotel Belmar?
A: Queremos ofrecer la mejor comida en Monteverde y una de las mejores ofrecidas en todo Costa Rica. La idea es ir rescatando ingredientes propios de la zona y de nuestro país, ofreciéndolos en platillos gourmet.
Estamos sembrando cada vez mas productos en nuestra huerta, e identificando a los mejores productores de la zona, para así lograr profundizar nuestra experiencia de granja a la mesa. A medida que identificamos nuevos ingredientes de calidad, iremos cambiando el menú para integrarlos.

Q: Cuáles de los platos nuevos son ejemplos de esa visión?
A: Todos los platos de nuestro nuevo menú fueron elegidos cuidadosamente. Fue un trabajo difícil, del que estamos muy orgullosos. Uno de estos platos es el gnocchi de plátano, hecho con plátanos de nuestra finca, salsa pomodoro elaborada con variedades criollas de tomate, ajo y queso azul de Costa Rica. Nuestro jardinero Gerardo, nos trae vegetales y hierbas de la huerta todos los días para así lograr el nivel de frescura mas alto.

Otro de mis platos favoritos es la sopa de ayote que fue creada con ingredientes de nuestro país pero con una visión gourmet. El plato es una fusión de sabores y aromas. A nuestros clientes les espera una gran sorpresa al sentir la primera cucharada en su paladar.

Q: Cómo se inspira para la creación de estas nuevas recetas?
A: Toda la creación de los platillos ha sido gracias a Dios, mi familia, personas que me inspiran día a día y al lugar en que nos encontramos. Fue una inspiración de nuestros clientes, inspiración también de otros chefs a nivel mundial que nos han servido de motivación y ejemplo a seguir construyendo esta historia.

Q: Quisiera decir algo más?
A: Todos los platillos del nuevo menú han sido laborados arduamente junto a todo mi equipo de trabajo en la Cocina. Gracias a ellos es que se logrará ofrecerles la mayor calidad a nuestros clientes, en cada plato, día con día. Todos los ingredientes fueron escogidos cuidadosamente. Esperamos complacer las más altas expectativas y que el venir a comer a nuestro hotel no sea simplemente venir a comer, sino toda una experiencia gastronómica.
